Bibingka Cheesecake

  • 2 blocks or 500g cream cheese, room temperature

  • 1 cup of white sugar

  • 4 eggs

  • 1 cup of coconut cream

  • ¾ tsp vanilla extract

  • ¼ tsp salt

  • ¼ cup All Purpose Flour

  • 2 pcs. Salted Egg, sliced

  • 250g Euro Chef Mozzarella, cubed

  • 250g Euro Chef Cheddar Cheese, crumbled or grated

  • 100 g margarine

  • Cleaned and wilted banana Leaves


  1. Preheat the oven to 400°F

  2. Line muffin trays with cleaned and wilted banana leaves. As a substitute, you can use parchment paper.

  3. To prepare the cheesecake mixture, in a bowl, smoothen the room temperature cream cheese. Add the sugar and whisk until smooth. Add in the eggs one by one, whisk again until thoroughly combined. Add the coconut cream, vanilla extract. Add sifted all purpose flour and salt.

  4. Put 1 cube of Euro Chef Mozzarella in each slot then fill with cheesecake mixture until the about ⅘ filled. Top with Euro Chef cheddar cheese and a slice of salted egg.

  5. Bake for 30-40 minutes or until the top is browned. While hot, brush with margarine.

  6. Serve with a hot cup of coffee, better to share with your loved one :)
